The nose neat is a powerful smooth spirit with a noticeable herbal Artemisia profile with soft tones of anis, fennel and spicy coriander showing… … after dilution the louche effect has turned the absinthe supérieure to a milky, opalescent green/yellow and opens up the aroma and taste, as the essential oils trapped in the distillations are released, filling the air and your senses. French government issue absinthe to soldiers in North Africa, to ward off disease. The Fine Art of Distilling & Blending The nine botanicals of La Fée Parisienne are individually distilled (as opposed to a single distillation of all the ingredients together). These distillates are then carefully blended by the master distiller according to the French Absinthe Museum approved recipe.Parisienne is distilled at the traditional 68% abv following an authentic 19th century recipe and louches perfectly when water is added. A brand-new French product: Lucid (62%abv – American owned) launched in the USA in 2007. This was after America adopted the rules on Thujone (which we used for Europe in 1998) via the codex committee on food additives in December 2006: Crucially, Zero Thujone was re-classified as 10ppm or less in a Spirit they did not adopt the 35 ppm allowed for Amers in the EU, opening up the USA to the spirit. Whether chaperoning the World Bank, which was financing industrial operations on a grand scale for the first time in a former eastern bloc country, or a British supermarket seeking presence in the Czech market: I was conscious of the gap, not only between the then Soviet mentality and the western approach to business, but also to the potential impact of, and importance to our clients of local cultural differences. During its acquisition of the K-Mart operation in the Czech Republic, the Tesco due diligence team, for example, was most astonished to see Carp (the traditional Christmas Eve dish here) being sold live in store and then often being kept in domestic bathtubs for several days to purge them of the muddy taste characteristic of bottom-feeders. Another important distinction was the lower percentage of supermarket floor space around 30% – allocated to food retailing. Tesco is moving substantially towards that ratio in the UK (though live carp is still conspicuous by its absence) and it will be interesting to see how the company handles its current move into the USA, a market which La Fėe too is entering. Once the spirit is distilled with the respective herbs and spices it will be cut down to strength using demineralised water for Blanche and Parisienne, the final Absinthe is cut to 53%abv (106 proof) and for Parisienne, the final Absinthe is cut to 68% abv (136 proof). The Taste of True French Absinthe The brand original, La Fée Parisienne Absinthe Supérieure, is a traditional French absinthe distilled at the Cherry Rocher distillery using Grand Wormwood (Artemisia absinthium) and other fine herbs.

Grande Absinthe (Wormwood), Genepi (Alpine Wormwood), Star Anise, Fennel, Coriander, Green Anise, Southern, Wormwood, Hyssop And a variety of other herbs to each distillers choosing… (La Fée Absinthe Parisienne contains a secret ingredient a rare herb which the museum insists is present and adds to its balance) Top: Extract from the document made available to all UK County Councils (from November 1998) to prove legality of absintheRowley left disappointed, but continued to petition Delahaye, asking whether she’d work with him to create the real stuff – in a French distillery (the ban prevented consumption not manufacture). She agreed and, with the consent of the French tax office, they got to work. My company set out to change absinthe’s status as merely an artefact of the past. Reading about absinthe is one thing. But seeing it, smelling it, tasting it, and finally experiencing it take one both physically and mentally to another level of understanding. Absinthe opens a door in time to a bygone age, bringing to life the heady atmosphere of Paris in the thirty years of decadence and enlightenment which led up to the Great War of 1914. There are eight natural ingredients in La Fée absinthe: three types of wormwood (grand, petit and genepi), two types of anise (star and green), fennel, coriander and hyssop. ‘We kept the use of genepi, or “mountain wormwood”, a secret for years – it’s definitely something that sets us apart,’ says Rowley. Christian Camax: Master Distiller of Pastis, based in the periphery of Paris, whose distillery had historic links with Absinthe production. He also brought with him access to old copper stills. Christian recently retired and his works are being ably carried through by Cherry Rocher. We are coming in Les Deux Alpes for the new year’s eve and we would like to have the 31st December’s dinner.

La Fée distil a range of six different absinthes: Parisienne, a traditional French style Verte (coloured/green) absinthe; Blanche, a traditional Blanche (white/clear) style; Bohemian, a modern, Czech style absinthe; La Fée X•S Suisse and La Fée X•S Française, which are two “extra supérieure,” wine-based absinthes; and La Fée NV, a lower strength absinthe for "modern drinking." Absinthe makes you go mad.’ In the late 19th and early 20th century, France’s temperance advocates hammered this message home so zealously that it led to a ban in 1915. It wasn’t until the 1990s that absinthe, in its authentic form, reappeared. Method: Pour La Fée into glass with a couple of ice cubes. Stir in grenadine, top with chilled water. Each bottle of La Fée Parisienne Absinthe Supérieure is coated in a UV inhibitor, which protects its delicate natural ingredients from light damage. The tall, thin shape of the bottle matches those most commonly found at Delahaye’s museum – a further effort to honour the drink’s heritage. La Fée Absinthe Parisienne was first distilled in July 2000 [1] in association with the Musée de l’Absinthe, Auvers-sur-Oise, France, and its founder and curator, Marie-Claude Delahaye, who is also a Director of La Fée LLP. [2] It was the first absinthe to be legally distilled and bottled in France since the 1915 ban. It is distilled in copper stills at the Cherry Rocher distillery in the Rhône-Alpes region of south-east France and contains nine different herbs and spices, including Artemisia absinthium (Grande Wormwood) and Artemisia pontica (Petite Wormwood). It is bottled at 68% ABV: The traditional strength for French absinthe was 68% ABV - 72% ABV.
